Demo:  fillet & skin plaice, prep & cook muscles  

 

Pan roasted cod, triple cooked hand cut chips, pea & mint puree, warm tartare sauce 

Demo:  filleting and portioning the cod, pan roasting cod 

 

Lemon tart, crème fraiche sorbet
